Tipken’s by Nils Henkel at Severin’s Resort & Spa on Sylt is synonymous with contemporary gourmet cuisine, characterised by a distinct style and understated elegance. Since opening in 2023, the evening restaurant has been delighting diners with the unmistakable culinary philosophy of its namesake and owner, Nils Henkel, and head chef René Verse. For the second year running, the restaurant has been awarded a Michelin star by the Michelin Guide.
Head chef René Verse develops the seasonally changing menus in collaboration with Nils Henkel and, together with his team, brings them to life creatively on Sylt. The focus is on Nordic-inspired interpretations of Nils Henkel’s renowned flora and fauna cuisine. This unique philosophy highlights the diversity and naturalness of plant-based products, combining them with selected ingredients to create finely balanced compositions – precise, innovative and full of flavour.
Look forward to excellent Michelin-starred cuisine on Sylt, which harmoniously combines lightness and depth. During the summer months, you can also enjoy this culinary experience whilst dining al fresco on the terrace, overlooking the picturesque orchard. Restaurant manager Julia Westphal and her team, together with sommelier Bernd Ahlert, will ensure a thoroughly enjoyable evening with their keen intuition and warm hospitality.
