Nils Henkel is an exceptional culinary talent and is considered a pioneer of modern vegetable cuisine with his Flora and Fauna menus. He serves his guests a cuisine that is inventive, modern and sustainable, with different textures and aromatic surprises. He pays special attention to seasonal herbs and vegetables.

2. Flora

In Nils Henkel's kitchen, Flora stands for working with vegetables and herbs. As the seasons change, he creates artful vegetarian dishes with lots of flavour and texture. He also likes to conjure up vegan dishes on the plates of his guests. 

3. Fauna

With unique Fauna dishes, all of which contain components of animal origin, Nils Henkel takes his guests on a culinary journey. The season and the regional availability of the products play a significant role in the sense of sustainability. He likes to combine regional products with international flavours, herbs or spices to create his unique and outstanding star cuisine in Sylt.
